Help With Your Kitchen Touchdown on a Cold Game Day

It’s that special day of the year… time to take a break from your home renovations and DIY projects. Great snacks are a big win on a day like Super Bowl 2018. It’s best to face off with delicious food while the Eagles face off with the Patriots. You also want to make sure that they are suitable for the weather– no Super Bowl Sundaes if it’s already freezing outside.  We consulted some of our food blogging buddies for some of their favorite game day snacks so kick back, relax, and enjoy this quasi-American holiday.

According to Accuweather, Minneapolis could be seeing record low temperatures on the day of the 2018 Super Bowl. While the game takes place at the indoor U.S. Bank Stadium, traveling fans are set to experience some brutal cold in the area. Preparation is key for great snacks to beat the cold and have a great time. It’s recommended to spice it up in the kitchen this year.

    Chicken Fajita NachosChicken-Fajita-Nachos

Chris from Sweet Mornings shared an amazing recipe for chicken fajita nachos around Super Bowl 2016 and this dish is still sure to do the trick. It can serve as either an appetizer or main course depending on your distribution of ingredients, making it highly versatile.

You’ll want to begin by marinating your pre-cut chicken in a variety of hot spices: chili powder, cayenne pepper, onion salt, and cumin. This gives the chicken some teeth with every mouth watering bite. You can marinate for as little as 30 minutes or as long as a day.

Roughly 20-25 minutes before you are ready to serve, you will want to heat a pan with approx. 1 tablespoon of olive oil and cook the chicken pieces until tender at medium heat. This should take about 10 minutes. Saute onion and pepper slices for about 10 minutes. Prepare your platter of tortilla chips and pour the chicken / onion & pepper over the chips ensuring an even distribution.

Pour your cheese (we prefer a jalapeno queso) over the chips, getting all of the chicken and vegetables covered. You’ll want to shred it and add some milk before heating it up. The combination of flavors at this point will knock your socks off!

    Chili Cheese Pigs in BlanketsChili-Cheese-Pigs-In-A-Blanket

This fun recipe from Ashley at wishes and dishes can be served hot as you like for game time, and feature as a strong appetizer or main course depending on the size of the wieners you use (cocktail or hot dog). The ingredient list is a full-on calorie assault, so you may prefer to keep this one as a light offering among your different dishes.

You’ll want to pick up some crescent roll dough, cocktail weiners, and a small amount of olive oil for your hush puppies. The chili dip can be made with cream cheese, chili, and some sharp cheddar cheese.

After preheating your oven to 350°, wrap your cocktail weiners in small slices of the dough. Set them side-by-side in the outer ring of your pie pan or baking dish to form a circle. Using a small pastry brush, get some olive oil onto their tops. Mix the chili ingredients in a mixing bowl and then pour into the center of your pie tin. Sprinkle additional cheese over the chili and then we’re ready for the oven. Bake for about 20 minutes when the dip should be bubbling and the cheese fully melted. You’re ready to serve!

    Bacon Wrapped Jalapeno PoppersBacon-Wrapped-Jalapeno-Poppers

Of the three Super Bowl snack ideas we’re sharing today, this one definitely requires the most prep. But the reward for all your hard work is clear in just how delicious these spicy little pieces of heaven are. This recipe comes from Rami at Tasteaholics and aims to be a lower carb alternative to some of the high calorie appetizers so common on game day.

Begin by preheating your oven to 350°. Slice your bacon lengths in half, then move on to cutting your jalapenos. You will want to cut the tips off, then proceed to cutting the jalapenos in half. Gut them of their seeds and membranes.

Mix cream cheese and cheddar (or your choice of cheese) in a bowl, then fill each of the jalapeno halves. You can choose to re-combine halves before bacon wrapping, but most prefer to leave the halves separate for twice the servings. Wrap them in the bacon, then place all of the pieces in a baking sheet with aluminum foil. Ensure that there is some clearance between each of them so that the bacon doesn’t fuse. You will want to bake for around 20-25 minutes, in order to avoid baking out all of the spiciness from the jalapenos.

Important note: While cutting your jalapenos, you should wear gloves in order to avoid any pain in your fingers from absorbing the capsaicin.
